This is a fun recipe that the kids will enjoy making.
2 packages (10-ounce size) frozen chopped spinach
1 tablespoon dried minced onion
3 tablespoons butter
1 cup herb-seasoned stuffing mix
1 cup grated Parmesan cheese
2 beaten eggs
In a saucepan cook the spinach and dried onion according to spinach package directions. Drain well. In a mixing bowl stir together hot spinach mixture and butter until butter melts. Add stuffing mix and cheese. Stir in eggs.
Shape into 1-inch balls. (If desired, place spinach balls in a shallow pan.)
To freeze: Cover and freeze about 1 hour or till firm. Transfer spinach balls to freezer container. Seal, label, and freeze up to 4 months.
To Cook: Place unfrozen spinach balls on a greased baking sheet. Bake in a 375F oven about 7 minutes or till heated through. (Or place frozen spinach balls in a shallow baking pan. Bake at 375F for 15 to 20 minutes or till heated through).
